While the fish taco’s origin in Mexico may be unclear, Ralph Rubio is credited with introducing it to the U.S. Inspired by a simple, delicious fish taco he encountered during a college spring break trip to San Felipe; Ralph opened the first Rubio’s near the beach in San Diego in 1983.
Starting as a small, walk-up taco stand in Mission Bay, Rubio’s sold its famous beer-battered Original Fish Taco®. Over the years, the brand expanded to nearly 160 restaurants in three states, selling more than 200 million fish tacos.
